Jackpot makes Vegan Whole Wheat Spelt Chocolate Chip Muffins

Hello dear readers!

Hope you all had a wonderful weekend and that you soaked up some of that sunshine that came about on the weekend. I think I had a little bit too much sun on Saturday and am now sporting some severe sunburn marks resembling the colour of cooked lobster. I think I’ll stick to the shade for now ;p

After a weekend of eating to celebrate my last birthday in my 20’s which included one or two food comas, I thought I’d share a new recipe with you since I haven’t posted a recipe in a while. I’ve been experimenting with vegan muffins and vegan chocolate chips and wanted to make the perfect combination of a nutritious and hearty breakfast muffin but utilising some sweetness from some vegan chocolate chips I bought not long ago.

VEGAN WHOLE WHEAT SPELT CHOCOLATE CHIP MUFFINS

Ingredients:

  • 2 cups of whole wheat spelt flour
  • 1/2 tsp of baking soda
  • 1/2 tsp of baking powder
  • a pinch of salt
  • 1-2 tsps of cinnamon
  • 3/4 cups of almond milk (or any other type of soy milk)
  • 1 tbsp of apple cider vinegar (to make a vegan buttermilk)
  • 1 tsp of pure vanilla extract
  • 1/3 cup of pure maple syrup
  • 1/3 cup of coconut oil melted
  • 1/2 cup of mini vegan chocolate chips

Method:

  1. Preheat your oven to 180 degrees Celsius.
  2. Line a muffin pan with muffin liners or lightly oil a muffin pan if you are making the muffins without the liners and set aside.
  3. Combine all your dry ingredients together in a large bowl: flour, baking soda, baking powder, salt, cinnamon and then set aside.
  4. In a smaller bowl, create your vegan buttermilk by adding the apple cider vinegar to the almond milk. Let it sit for a few minutes until it curdles.
  5. Add in the rest of the wet ingredients to the vegan buttermilk mixture: pure maple syrup and melted coconut oil.
  6. Mix the wet ingredients together and then pour the wet ingredients into the dry ingredients bowl. Be careful not to overmix the batter.
  7. Fold in the mini vegan chocolate chips into the batter.
  8. Fill each muffin cup about 3/4’s full using an ice cream scoop or large spoon.
  9. Bake in the oven for 20-25 minutes or until the muffin tops have browned slightly. I baked mine for 20 minutes as the muffins seemed to brown more quickly.
  10. Once the muffins have baked, cool the muffins on a wire rack.
  11. Enjoy!

I was really happy with how this recipe turned out, the muffin was slightly sweet from the hint of maple and the chocolate chips and the spelt flour gave it a nutty taste which I quite liked. A great on the go snack or something to have for breakfast when you don’t know what to eat.

I have been making a few variations of this muffin using mashed bananas for added moisture and sweetness which I have found works really well.

Definitely a recipe I will keep working on and experimenting with until I find the perfect balance but this experiment didn’t turn out too badly!

JACKPOT visits Me and Art

Hello readers!

Hope you all are having a great week so far and thank goodness it’s Thursday meaning it’s nearly the end of the week! Looking forward to relaxing on the weekend with some good weather, good food and catching up with friends, celebrating a 1 month for a cute baby girl and of course some basketball in between!

Last weekend I wanted to grab a few things from Thomas Dux in Surry Hills as I do from time to time when I have a chance to stock up on baking ingredients and food for the week ahead. As Mr Muscles and I had not eaten breakfast at this point in time, I thought this would be a good opportunity to check out another café on my list. I love going to vegan cafes to try out the various foods on offer whether it be savoury or sweet food.

My top vegan places in Sydney at the moment are:

  • Sadhana Kitchen – great for breakfast and lunch and of course if you feel like indulging, they do some really great raw cakes
  • Nourishing Quarter – great little dinner place serving fusion Vietnamese food with a modern take on it – love their tofu and quinoa dumplings, their quinoa rice paper rolls and their noodle salad served with crispy tofu and they also do raw cakes here if you are feeling like something a bit more sweet after dinner

I have yet to try Earth to Table in Bondi Junction which I have read many great reviews and am keen to hopefully try this vegan place out on the weekend…blog will follow shortly after of course =)

I’m always worried about taking Mr Muscles to vegan places as I am always worried he will never be full or won’t like what is on offer on the menus. Mr Muscles however happily guided me along the way as we searched for the café. We ended up walking from Thomas Dux a few blocks down in Surry Hills and finally found the café after a nice walk through Surry Hills.

Me and Art is quite a small café with some seating provided outside the café, some tables and chairs found inside the café and out back in their courtyard. As it was a nice day, we decided to sit outside their courtyard and take in the nice weather. It was chilly but the sun was shining and it turned out to be a really nice day.

The café is known for their Japanese artwork which hangs inside the café. I didn’t get to take a picture of this unfortunately but will next time I visit. Apparently these pictures are not just for show and that they are available for purchase for anyone interested with new artwork coming in every few weeks. It’s a very quirky café with even tables that have been sourced by the owner from various places.

The one thing that stood out about this café were the friendly staff who were quick to assist wherever needed. Mr Muscles had no idea what he wanted to drink as he was feeling like some juice and one of the staff decided to make something on the whim from the flavours that Mr Muscles had told them he wanted. It was this attention to detail and their great service that really makes this café different to other cafes we have been to.

Avocado Toast

Mr Muscles wasn’t feeling too good so decided to get something small to eat. We were both surprised at how generous they were with the avocado which was lovely, ripe and smooth. The sourdough had a nice taste to it with the toast still quite crunchy despite the amount of avocado layered on top of the toast. Mr Muscles really enjoyed the dish however didn’t really care for the ground turmeric which had been sprinkled over the top of the avocado. He felt it overpowered the taste of the avocado and so decided to remove this and eat the rest of it sans turmeric. All in all a very healthy and filling breakfast in which Mr Muscles left feeling rather full.

Buckwheat Pancakes

My meal: cocoa and cinnamon buckwheat pancakes topped with banana, berries, nuts & seeds served with maple syrup and shredded coconut $12.00

I ordered the pancakes as I really can’t say no to pancakes and the fact that these were healthy pancakes…this was already a win win situation to begin with. The pancakes were not as soft as I had imagined but rather a bit more dense as the buckwheat flavour was quite predominant. I couldn’t really taste the cocoa or cinnamon but I found the pancakes really lovely and not too heavy to eat that I managed to finish the whole dish. The banana and the nuts and seeds were a nice side to the dish as you got a bit of crunch, a bit of sweetness from the maple syrup and banana and a bit of tartness from the berries. I felt healthier just by eating this dish. I’ve tried recreating buckwheat pancakes at home but have never been successful. Now that I have tried these pancakes I am on a mission to try and create some wonderful buckwheat pancakes that don’t taste like rubber!

Mr Muscles and I left the café feeling full and satisfied. This café is definitely an up and coming café as I’m sure that more and more people will come to visit as they also serve lunch and if not for the dining experience then to view the lovely art hanging on the walls of the café. I know I’ll be back to try their nachos with tofu cashew sour cream and vegan cheese and of course their vegan pies which I have heard are really good!

Jackpot and Mr Muscles celebrate one year at Sokyo!

Hello dear readers!

I am finally back with a new post. It’s been a very long time and I am finding it more and more difficult to find time to blog whilst juggling work, basketball and baking. But I’m hoping that I can still maintain this blog and let you guys all know what I have been up to whether it’s baking in the kitchen making new recipes and experimenting with new ingredients or visiting new cafes and restaurants when I can.

Mr Muscles and I celebrated our one year a few weeks ago. Mr Muscles decided to take me to Sokyo to celebrate our anniversary as he had never been before and was eager to try the food. I have been a few times and always thought the food was really well executed so I was excited to come back and try other dishes which I hadn’t tried before. Japanese food is also our go to food when we don’t know what we are in the mood to eat so we know that we will always enjoy our meal regardless as we both have a love for Japanese food more so now than we ever did before.

We booked dinner for a saturday night and the restaurant became quite full quite quickly despite us having a very early dinner booking. There were birthdays celebrated that night, a hen’ s night dinner and lots of families with their little children.

Mr Muscles and I decided to order various dishes that both of us had never tried before and we were really happy with the selection of dishes we chose as each dish did not disappoint.

Scallop Sashimi

This was a really nice dish and usually I don’t eat a lot of raw food but the scallop sashimi was cut very finely and the tomatoes paired wonderfully with the scallops.

Mr Muscles knows how much I love eating tamago (egg omelette) whenever we go to Japanese restaurants so he ordered this for me. This was unlike anything I had eaten before mainly because it reminded me of a soft fluffy cake almost and not the firm texture in the omelette that I am used to eating. It was soft and melted in your mouth with each bite and I ended up eating most of this as Mr Muscles gave me his share.

Mr Muscles wanted to order a salad so we ended up getting the sashimi salad. I don’t really eat raw food so Mr Muscles ended up eating most of this. The salad itself was quite spicy from the chilli paste but I enjoyed the cherry tomatoes in this dish nonetheless.

Beef Short Rib

I don’t usually eat much meat but this dish was really good. The beef melted in your mouth with each bite and it was so tender that Mr Muscles and I ended up eating this dish really quickly. It was rich in flavour but so wonderfully moreish.

Miso Cod

Caramelised Miso Cod served with Japanese Salsa and Cucumber Salad

I had heard that the Miso Cod was one of their stand out dishes so I knew I wanted to order this dish. We were not disappointed as the Miso cod was rich in flavour and also melted in your mouth with each bite as each piece fell apart easily. The cucumber salad cut through all the richness which paired really well with the fish. It was a really well executed dish which Mr Muscles and I enjoyed thoroughly.

We ordered the Queensland Roll which came out last for the savoury dishes and we were not disappointed by this choice. The sushi rolls were covered in rice paper instead of the normal seaweed which I thought was a really nice change and topped with avocado. It was such a wonderful dish that I really probably could have eaten two plates of this. Definitely something I will order again when I visit the restaurant again next time.

The Dessert Sampler: Yamazaki Caramel Macchiato (coffee ice cream, cocoa nibs and whisky foam), Sokyo’s Mochi Ice Cream (Yatsuhashi Kyoto mocha with frozen strawberry milkshake), Goma Street (black sesame ice-cream, caramelised white chocolate mousse sandwiched between 2 pieces of chocolate and nutty brittle pieces and a panacotta with tapioca sago pudding layered on top with tropical fruit served in a glass jar.

Mr Muscles decided to order the dessert sampler as if I had the choice I’m pretty sure I would have ordered 5 plates of dessert but by this time we were both getting quite full and I couldn’t decide between some of the desserts so the sampler was picked in the end.

I ended up eating most of this dessert sampler as Mr Muscles knows how much of  sweet tooth I have. I didn’t eat any of the Macchiato dessert as I am not a fan of coffee so Mr Muscles ended up eating all of this. Goma Street is the best dessert in my opinion at Sokyo – it never disappoints and all the flavours of black sesame and white chocolate pair wonderfully together that it leaves you wanting more each time. I devoured this whole that Mr Muscles didn’t end up tasting this except for a few left over scraps that I didn’t end up eating. The mochi ice cream is always a nice choice for dessert however I find the strawberry milkshake filling to be quite overpowering and sweet.  I was disappointed with the pannacotta that was not really reminiscent of a pannacotta. The texture was quite different than usual and more reminscent of liquid rather than being firm as if it were missing some gelatine. I felt that this dessert was a bit of a hit and a miss as the tapioca pudding layer also didn’t seem to really suit the dish.

All in all we had a wonderful dinner celebrating our anniversary. Good food and even better company – what more can you ask for?

JACKPOT bakes vegan baked banana donuts

I know I have been a bit slow with the posting of entries but work, basketball and baking have really taken up all my time…where does all the hours go in a day? I never seem to keep up and I am lacking a lot of sleep as a result but hopefully in time I can go back to regularly posting. I appreciate your patience dear readers!

I wanted to post some pictures from a baking experiment from a few weeks ago. I have made many baked donuts over the years from a chocolate variety using applesauce and raw cacao powder to a vegan Krispy Kreme style donut. I wanted to bake a batch of baked banana donuts as I had experimented with a batch a year ago and wanted to see whether I could make another variation this time around.

There is no recipe yet as I am still perfecting the donuts and I was surprised that my donuts turned out more like banana bread donuts being a bit more dense in texture than what I was aiming for. They tasted great though still and Mr Muscles practically devoured the whole batch of them so I’m sure that they weren’t at all too bad. I used whole wheat spelt flour and used quite a bit of cinnamon so that the cinnamon and banana flavour could be tasted in the donut. Cinnamon and banana work so well and the smell is so heavenly when you devour the donut bit of bit when its nice and hot.

I’m definitely going to keep experimenting until I find the perfect balance. I tried to keep the oil to a very small amount and I used coconut oil for this batch but next time I might try using applesauce and remove the oil completely. The texture was also probably a bit too dense as I used quite a few bananas as I was being greedy and really wanted my donuts to have that banana flavour.

I ended up baking a small donut batch and a regular size donut batch. I love eating the small donuts as I feel less guilty eating a lot more of them than the regular size ones…but hey that’s just me ;P

Speaking of bananas, I have been trying to perfect a vegan banana bread recipe without the end product being too moist. Each time I make a vegan banana bread, the end result is a very moist banana bread lacking texture from the flour that is reminiscent of those wonderful buttery and sugary banana breads you get at cafes. I wanted to mirror this but in a more healthy way replacing the oil and sugar but unfortunately when you keep subbing various ingredients into the batter, the end result is never quite what you expect at times. I will definitely keep experimenting and hopefully come up with better results.

JACKPOT visits the Tea Salon at the Victoria Room

Happy Monday dear readers!

I hope you all had a wonderful weekend filled with plenty of rest and relaxation! I feel like the weekend has gone by in the blink of an eye and if anything I feel more exhausted than ever trying to pack everything into the weekend before the week starts again. I’m hoping to catch up on some sleep this weekend.

Besides playing a lot of basketball over the weekend, I managed to catch up with Mrs Papparazzi yesterday for lunch. It’s been awhile since we last caught up so it was a good to catch up on what’s been happening. We decided to try our luck and see if there were any tables available at the Victoria Room Tea Salon in Westfield Sydney as usually it’s quite busy. We were in luck as we were able to get a seat not long after we queued in line for a table. We were seated in the corner so it was good to get a somewhat private area to just chat amongst ourselves without being too disturbed by the other customers.

There is the option of having the normal high tea menu or ordering from the main menu. Mrs Papparazzi and I were quite indecisive that day so we chose to go for the easier option and opted for the Classic High Tea to eliminate any decisions and choices that had to be made. However the choice of scones was difficult in the end for me…so many to choose from and with only the choice of one scone ;P

Mrs Papparazzi and I started off the high tea with the bottom tier of finger sandwiches. There is quite a few variations of finger sandwiches made with either white bread or wholemeal brown bread. I loved the chicken & wild herbs sandwich despite it being on white bread and the smoked salmon on brown bread. Mrs Papparazzi loves white bread whereas I love brown bread so in the end it worked out as I ended up eating most of the brown bread sandwiches except for the roast beef as I have never been a fan of it since I was young. I liked the lightness of the sandwiches so that there was still room in my stomach for the rest of the sweet treats and scone.

I decided to try a different scone this time as I had tried the Lavender scone on the previous time I visited and wanted to try something different. There were so may choices from savoury to sweet scones with various different flavours. I ended up picking the orange and date and was hoping that the orange wasn’t too overpowering and I was in luck as the orange flavour was subtle but paired well with the sweet dates. Mrs Papparazzi ended up choosing the white chocolate and cranberry scone which I have heard is really lovely. There is also a rose scone that they serve with bits of turkish delight inside the scone or if you have gluten intolerances, there is also a gluten-free scone which you can request for. I think I will try the gluten-free scone next time I have high tea here. My scone came with some orange marmalade however I’m not a fan of marmalade and ended up eating my scone with the classic strawberry jam instead…tasted really good! I loved all the sweet food on offer. My massive sweet tooth ensured that I sampled each and every one of the desserts…yes I know I really need to stop eating so much dessert..I’m planning on eating healthy throughout this week hopefully ;p I loved the taste of the cheesecake. Rich and decadent and luckily served as a small portion because I’m pretty sure I could have eaten 10 of these in one sitting! Also I really loved the texture of the cupcake…it wasn’t dry and the frosting reminded me of the cupcakes I used to eat when I was a kid. I have to thank Mrs Papparazzi for taking some of the photos for me on my camera as I had eaten the sweet food before taking any close up photos of them…yep my big sweet tooth once again! ;p

It was a good catch up over a lovely high tea…I’m sure that I’ll be seeing Mrs Papparazzi again for another food adventure soon!
